    A little bit of smoked grub...

    Decided to stay up here instead of making the 7 hour drive to my brother's to make sausage because of timing. 93 links of smoked heaven with the usual Breezy family recipe is in the freezer.... A small batch by normal standards but we split the full batch two ways.

    Add in simmering 3 euro heads, including Chiefs, cleaning them while smoking and it was an all day affair. I'm a worn out pup.. ...I may pay somebody to do euros next year and just stick to the sausage...lol...

    Sorry, no other pics because all folks present were contributing to the process and we didn't have a "dedicated camera guy".......

    On a side note I did get to see the WorkSharp in action before I bought. Very impressed with that little gem.

            How long do they smoke, what temp, and Type of wood? Sorry for all the questions, just interested in doing some home processing myself.

              That depends Ty on the humidity. These were 4.5 hours with very low humidity. I took part in a 17 smoking hour marathon when a cold front brought in more humidity than forecasted and the sausage wouldn't take smoke well..


              what temp?


              We cold smoke so there is as little heat as possible. The smoke is for flavor here....not to cook.


              and Type of wood?

              I prefer mesquite for sausage but buddy got to choose the wood this year and hickory it was....oak and pecan are up there as well.
