3/8" hot oil in a cast iron skillet.

Separate the leg half from the breast half. Dunk in buttermilk, then roll in self rising flour/salt/pepper/tony's or equivalent.

Fry fast turning as needed and don't overcook. Legs cook faster than the breasts.

Then make cream gravy with the crumbles after frying, serve with white rice and a veggie.

Yum. It doesn't get any better than that.

Rub with a little olive oil and put on your favorite type of rub (Ragin Blaze, Tony C, B-Dust, etc) and grill.

Just roll the breast in some seasoned flour, and fry it up the same way you would do a chicken!!!
Then just add some mashed taters, corn on the cob, and cathead biscuits!!!

This is spot-on. We raised bob whites and blues about 15 years ago. Killed and breasted them all out in an afternoon and had a big fry usually a week later. Excellent.

And people who have never had white rice w/ homemade gravy don't know what they're missing!

Sometimes I grill, sometimes I fry. They are the one game bird I prefer fried, and BEST eating .....well second to phesant.

I marinate in "Allegro game tame" for about 2 hrs with VERY LITTLE season all.
                        heat oil
mix in bowl eggs and small splash of milk
in another bowl mix flour, tony's to taste (I use a lot)
dip in egg, then flour....then back in egg.....then back in flour
                        fry till golden brown.

Onion in breast cavity, japaleno on outside of breast, wrap in bacon. Put in disposable aluminum baking dish. Add season salt and then cover in Zesty Italian salad dressing. Smoke on grill using indirect heat for about 30 min. Cover in foil and finish cooking til done. I use a charcoal Weber and I'm done in an hour. Add a side of wild rice. Use the left over salad dressing to glaze the quail and cover the rice.
