    Seasoning smoker wood

    Do you guys let your smoker wood lay in the field or sit up for any specific amount of time? Had an old timer tell me we just got through splitting his wood for his 2012 smoker needs. Said he lets it sit up for a year on the rack. We have always cut it then used it as needed assuming it had dried out.

    6 months to year, depending on type of wood, pecan is ok if not totally dried but mesquite will make the meat taste funny if its still wet, hickory can be used directly off the tree

      I let it sit on the rack 6-9 months before I use it.

        I don't use any wood until the bark slips off
