Cast iron is the best thing in the world. In days of old, families actually willed the cast iron to family members because it was so highly valued and cherished. And, using it does actually add iron to your mineral intake. How many other things in your kitchen can boast that? I love my dutches, the five skillets from huge down to a four-incher are fabulous, grill pan is awesome, griddle makes dreamy pancakes, trout-shaped muffin pan is a kick, but I have to say I love my cast iron wok best of all. That thing roars!

About 90% of the cooking I do is in cast iron pots/pan or skillet. Do not know if I could do with out them. Been using most of them for 20 plus years now.

Absolutely nothing cooks better. I have one from my grandmother and one from my great grandmother. Also have a dutch oven from the estate of a friend of the family. I actually have an Emeril branded cast iron wok. It isn't half of what the old ones are, but it will make for some good fajitas. It was around $25 at one of those Ross stores. I couldn't pass it up.

Question-- what's the best way to bring back a skillet that was totally rusted up?? A friend gave me one that was found in a storage shed.. For the record,I have a set of Lodge that is perfectly seasoned, use it all the time..
This one skillet that was rusted,I scrubbed it the best I could, have seasoned it many many times, but it still is not totally non-stick like my other ones..
What type of oil do you use when you get through using yours?? I use peanut oil..any other suggestions.

                      Griswold rules.

When it's chili time at the house - we always cook the cornbread in cast iron.

We had one like this (mom didn't clean it after the chili cookoff)

So we boiled water in it and scrubbed with a wire brush
                        Rinse and repeat!
We did it several times and knocked all the pitted rust out and then put some veggie oil in as it was still hot and walla! It's like knew again

I know the critics are going to jump on the wire brush but my grandpa did it just as his grandpa did it and we never had problems
