Not the same as from a cold mtn stream. . . . What size are they stocking? 8 inches or less, 5 will cover 2 people with a good heap of mashed potatoe filler. 12in is about a 1 per person deal, and you can't really start splitting them till you get in the 16-18 inch range.
That said, I LOVE catching trout, but I don't eat them anymore.
Since I cannot get to a mountain stream I will just close my eye each time I take a bite and pretend.
I've caught some in the past out of Southlakes Park lakes, there are two, the biggest being about 8 inches. So, it's more like what can we stuff the trout in as apposed to what might be, other than mini-onions, stuffed into the trout.
I caught a couple many years ago out of Josey Lake Ranch (Carrollton) that were 15-16 inches in length. GW friend of mine explained to me that they (Carrollton) had stocked some trout for an event before the general stocking that didn't get caught. The usual length for the ones I catch are 9-12 inches.
* Stocking at Beal Park Lake and C.J. Kelly Park Pond will not take place December 10 as scheduled because of water quality problems at these lakes. Trout will be stocked when testing indicates that conditions have improved.
I have been fishing for them for year. I have to say theres not any meat on them bones. I love catching them but by the time you cook them its all bones.
By the way TBHers Super doopers or Cheeze I have found are the best baits.

if you want to simply chunk bait this has worked for me.....
don't know if these stockers are spooky or line shy but i use ultra light tackle with a 4 lb line and as others have mentioned cheese and corn work well. I don't use a bobber and i fish off the bottom; I weight the line with a small split shot (just enough to get the line out), allows me to feel them nibbling on the bait. And i use a small treble hook (size 12 or 14) and i crimp the barbs to allow easy hook removal.
Does anyone know why they do not stock any lakes in Lubbock any more?
It says they are stocking Hale Center and Lamesa...........surely they will stock them in Lubbock. I used to killem em when I was younger.
Best way to rig your line for terminal trout fishing is just like a carolina rig w/ beads, weight, swivel and a 12 to 18 inch leader and a small treble hook. Bait it with chartruese power bait so it floats off the bottom and you are ready to go.
