    Suggestions for Axis meat???

    GITERREL is bringing me on an axis doe hunt this weekend and this will be my first exotic animal. I was looking for some advice on what to get made out of it in terms/comparison to a whitetail.

    I have only ever gotten a whitetail processed so I am curious from the experts if I should get something different made out of my axis. Thanks guys and I will have LDP's on Monday.

    Whitetail I have eaten: summer sausage, jerky, jalapeno/cheese sausage, hamburger, steak, slim jims, pan sausage, chili meat, stew meat

    Axis: ??????

    I'd get as much steak as possible and have the rest in hamburger and/or stew meat. You can make jerky and sausage out of other animals. Axis is too good to get anything but plain ol' meat, IMO.

      I love hamburger from an axis, and would get everything but the backstraps in burger meat.

        Backstrap, tenderloins, burger and cube steaks. You can do almost anything with the cube steaks. Good luck on your hunt.

          axis meat

          Do your self a favor and steak out as much as you possibly can then grind up what ever is left for hamburger. Axis meat is the absolute best you will ever eat.

            Thanks guys and keep em coming. Looks like I wont get sausage then out of it per yalls recommendations.
            Hamburger/Steaks seem to be the ticket.

            For the hamburger meat, 100 % axis meat or tell the processor to mix it?

              Nothing but steaks for an axis doe.....except those parts that cannot be steaked and then that goes to burger.

              This is one "deer" where steak is king.

                  As mentioned, steak all you can and grind the rest. I usually get backstraps, tenders and hams all steaked out. Ham steaks can be a bit tough in comparison, but a touch of tenderizer or a mallet whack will do wonders.

                    On the burger, get a little pork mixed in. IMO, the best is if you can get an axis doe (or 2) and a 50lb porker. . . .freezer full of goodness!

                        Some of the Axis steaks I've grilled have been better than a good ribeye. I love Axis so much that I came back from Louisiana last year and paid to shoot a doe on a guided ranch.
