    My first home process - axis

    Glad I am undertaking this but as a first time meat cutter it is time consuming. Just making burger and cutting some steaks rounds and loins. From recommendation going to make burger with bacon. And other suggestions. I've had her in ice for a week and a day bought time.

    Put an old towel under the cutting boards. Will keep the blood/juices from running off the table. I enjoy doing it myself, very rewarding.

      For axis, I steak out the back strap, keep the shoulders whole to roast later for a jambalaya. Steak out the hind quarter and leave one part whole for a roast. There is usually a ziploc bag or so full of extras to grind up and mix with brisket for burgers.

        Love that Axis meat...
        Spoke with my Rancher we lease from and he said he buys the pork butt roast to mix in, said his wife preferred getting a beef brisket and grind together for hamburger.
        It's real lean, but we don't even mix it with anything.

          What about the skirt?steak the bit hanging under the ribs . Fajita sized?
