Hudson's is top notch and is where I got my processing done when I loved in Austin. I would do it my own if I could, but I'm not sure what my school would say if they new I had a smoker, and walk in freezer in my dorm room...
Depending on how far north of SA your looking, I use either Farmers Market in Boerne or Hartcraft Processing in Fredericksburg. Hartcraft does any thing you want from ground to slim Jim style snack stixs.

Many years ago i took a 7 point buck to a taxidery, to mount , I had just started to mount what i would shoot. made a call and delivered my Buck he was their talking to another person, I waited them we talked, gave him my buck with a deposit of a $100 bill he gave me a reciept, over time i would call to check ,either he was out of the state hunting ,or he was not in, a lady would tell me that. Finally i drove by their and stopped to talk to him, I had my reciept with me he told me it was never dropped off because he had no record of it. That was the end of our conversation. NEVER EVER AGAIN WILL I TAKE ANYTHING TO THEM.... How do you forget your kill especially when you put down a deposit.....That is a true story and i will never forget it. Whenever we cross path's which we do I proudly look the other direction becuse I'm a better person.
Does anyone have a great/affordable meat processing in San Antonio? Preferably in the Northern or Western parts.

If you need to process something you shot in Rocksprings, drop it off at Woodburys in Ingram on your way back to SA. Otherwise, go to Eddie's in SA, 1604/Nacogdoches Rd
