I quarter the deer and make stew meet or ground meat out of front shoulders and neck, and cut back quarters into steaks. After I quarter it, I usually wrap it and leave it in my spare fridge for 5 to 8 days before cutting it all up and wrapping in butcher paper.

Cut off whatever you don't want to eat and save the good red meat. Sack it up and stick it in the freezer.

its not hard if you have the time to do it...get a good sharp knife, a decent grinderr and mixer, a vaccum sealer a cheap folding plasic table and a couple big bowls and theresnothing to it, wse usualy wait till we have a few deer and 2 or 3 of us will get together and do it.... just got done steaking /tenderizing my backstraps today for the freezer
