    Prickly Pears

    Went out to throckmorton to check the game camera pictures. While i was there, i gathered some prickly pears for jelly. It came out great.

    That is using the land for all it is worth. I would like to try that sometime. Directions of how to do it would be helpful.

        In order to get the juice, just skin each prickly pear with a knife. Then pulse in the blender. Then strain the blended pears in cheesecloth. Make a little extra so you can have some extra juice to mix with lemonade, or make margaritas.

            my wife's grandma has one of those stainless juicers...big steel pot with a spigot on the bottom and a basket inside...you put the fruit in the basket and water in the bottom of the pot and crank the heat on the stove. Steams the fruit and the juice comes out the spigot...get a potato masher and smush it down periodically to get all the juice out.

            we cut the prickly pears in half and throw em in there, thorns and all and cook em down. we just strain the juice through folded cheese cloth when it comes out to filter out all the little thorns and stuff.

                My Grandmother used to make jelly out of cactus when I was a kid. It was good stuff.

                              I cut them in half, put then in a quarte jar and fill with taquila. Marks the best margaritas...
