      I just cook it in the skin/scales and when it starts to flake you can just take a spatula and slide it inside the skin and lift the fillet right off. Serve the fillet and throw the burnt skin away. much easier.

        I tried that when I first heard about but I didn't like the mess it makes when the skin and the scales stick to the grill - the clean up is a pain - that's why I went back to scaling the fish and cooking it on aluminum foil - I also don't like the smell of the burnt fish skin/scales on my grill
