Next Friday I'm going to be in Galveston for the day. So where is worth eating/going if you just have one day to relax around there?

I love Galveston. Definitely go to the Strand and Seawolf Park. One of my favorite places on the Strand is LaKing's. It's an old time soda shop / homemade candy shop. Moody Gardens is very nice too. I haven't been to Schlitterbahn but I hear it's kind of small. As for dinner, I prefer Gaido's. Or Casey's is a good alternative if you want the same menu but more casual atmosphere.

The beach isn't that great in my opinion. I prefer to go west over San Luis Pass and hang out on Surfside.

Get a cooler full of beer and some bait and head west till you get to SLP. Hit the beach right before the bridge and fish till you run out of beer. It just doesnt get any more relaxing than that.
