Steak all I can, and grind the rest for sausage. Ham steaks on a doe can actually be pretty tender. Some of the tougher cuts (a relative term with axis) I'll make into cutlets.

Steak all I can, run through a tenderizer if an older deer, remainder goes into ground burger with a little beef brisket added.

I had mine processed and had them butterfly the backstraps, cut the hams into steaks, and stew meat (chunks) the rest.
