Elgato converts the file into an MPEG-4 filetype. MPEG-4's are a compressed filetype and the quality would suffer when capturing. It's always best to capture in uncompressed filetypes (.AVI).
I'm not sure if there is another option than Elgato, but if you can find a converter that doesn't save the captured video in a compressed filetype, you'll get better video. Remember, quality in = quality out.
Agree with above advice. Hi-8mm is an analog format. So you need a device that you can plug your camcorder into that will convert it to digital and then send that to your mac via usb or firewire. Pinnacle has been in this business a long time. Listed a link below for your convenience.

That looks like an easy enough way to do it. I have ten years worth of stuff from the Callaghan, and lots of stuff from Ohio I want to get backed up. $100 wouldn't be bad at all to save all those memories.
