    How long does it stay good??

    I have a backstrap that I put in marinate last week but was unable to cook it. Its been sitting in the frig in the marinate since last Tues. or Wed. Is it still good to eat or should I get rid of it just incase. I hate the thought of wasting it but don't want to get the family sick. How can I tell if its good or has it been sitting to long to take the chance. What do you think fellas? Thanks

    That's just out of range for me. I'll let backstrap that was thawed then put in fridge to sit for no more than 4 days.

    How I came up with 4 days you ask. That is how long we would let deer hang in our garage in fridgid arse NE Oregon when I was a kid.

      I'd have to pitch it....... I won't let raw meat sit in the fridge for more than 3-4 days.

        not sure what the various marinades will do to the condition of the meat but I left deer hanging in a cooler up to 4 weeks. If I didn't have a cooler I would age it for at least 2 weeks in the fridge. The marinade is the variable.

        i'm kinda brave when it comes to wild game and would just use the ole smell test

            Cook some and offer it to your neighbors.
            If they like it and don't get sick then you are good to go.

              My guess is that if well cooked it will be fine. Cooking will kill most critters. I just did a beef brisket for Thanksgiving that I had marinated in Soy Sauce, Vinegar, Lemon Juice, Jalepeno's, and Onions (sounds weird, but it's darned good) in a cooler with ice for three days and ain't nobody died yet.

                I think it will be fine but you might want to cook it more on the welldone side just to be safe

                  I marinated deer jerky(backstrap) for about 5 days before drying it and it was perfect. I think it will be fine.

                    I'd forgot about jerky. When I was a kid back on the reservation we used to make jerky like this.

                    Take a 5 gallon croc
                    put in a layer of venison
                    salt it down
                    another layer of venison
                    salt it down etc.
                    put a plate on top, weight it down with a rock
                    let it soak for a week or so outside (this was Norther Minnesota)
                    take the venison out and tie strings to the pieces
                    hand the venison by the stove pipe and let it hang for a couple months to dry
                    take it down, slice in in thin slices and eat away.
                    Nobody died and we thought it was good.

                          yep. Not quite as conservative as others will still use up to 7-8 days, beyond that I will cook it and let the dog have it. With marinade especially if it has any vinegar or other acetic ingredients (onions, soy, etc) will tack on another day or so as I believe these inhibit/slow down spoilage.

                            It's in Allegro Hickory Smoke. Just hate the thought of wasting it. Maybe I can list it in the classifieds as aged venison! jk
