Deer Processing

I'm looking for a good Deer processor near the Giddings/Brenham area that makes good Dried sausage. Any suggestions?

i heard lexington is getting a new process plant....other than that i have always heard good things about the snook processor (slovachiks) or something like that.

I heard the same thing about the deer processor in Lexington. Across from Herks I hear. But I heard its not supposed to open until January.

i was just there this wkd and they haven't even started a slab....i don't see it being done by January but i guess it's possible.

I might have to try them. I have tried snook and im not all that impressed with the dried sausage.
