Not sure if you guys have seen the show "Meat Eater" but there are 4 big fans in this household.
From our recent kill we have enjoyed the tenderloin night one. Head meat taco's three day's later (yes both my wife and daughter loved the taco's just didn't tell them what cut of meat it was until after dinner . Bacon three or 4 different mornings and now tonight our first shoulder.
Thawed the shoulder yesterday and cut up the meat for the grinder this evening. Plenty of spices, some fresh garlic, diced onion, and slight toping of Worcestershire and can't forget the cheese. I like jalapenos and onions on mine. Sliced sweet potatoes as a side. Beverage of choice tonight??? This Virginia boy chose some iced moonshine. **** good dinner.

Ster n Mas- I love the thorough coverage of your hog hunt from field to table. It's a great feeling putting together a great meal and knowing where your meat came from, how it was processed, how it was harvested, etc., and you are certainly putting together some great meals from that hog. Plus you are using so much of the animal. That's a great way to honor that animal's life. This may sound a bit goofy or sappy, but even hogs need love! Ha ha. It's easier to "honor" them when they're so darn tasty! I "honored" a nutria once, and that took a lot of effort.
