      Sous vide for whatever temp you prefer, pat dry and season, let rest to cool off, then 45 seconds per side in a smoking hot skillet.

      Dang it now I really want a steak.

          Sea salt (just a little because it takes well), liberally apply your preferred seasoning. Let it get to room temp then cook it to rare, I normally cook around 400 degrees for 4-5 minutes a side, let it rest, eat it. I’ve cooked some great steaks on a propane grill, my go to these days but nothing beats the taste of steaks cooked over a wood flame.

            Thick Porter House at room temp with salt pepper and garlic powder. My wife likes a rare steak so 1.5 to 2 minutes per side and she is good. I like mine a little more done.

              There ain't no secret. Grab whatever cut you prefer season to your liking, and cook it to your liking based on internal temp.

                My “perfect” steak is a Prime Ribeye, boneless. Let sit til room temp and pat dry. Get the grill going with a good amount of Mesquite and let it burn down until there’s a full amount of red hot glowing coals about 10-12 inches below the grate. About 20 minutes before they go on the grill, they are hit with a liquid binder and my choice of dry seasoning. The dried beef should soak up any liquid and rest for a bit. Right before steaks go on, I lift the grate off and liberally spray with nonstick oil away from the grill to avoid flare up’s. I immediately put steaks on and gauge time before turning based on size, thickness and touch. Steaks come off when they are ready and will rest for a short period of time to achieve Medium Rare doneness.

                  Is there a "Steakhouse" thread here in TBH?

                  I went to Bob's in McKinney for the first time last night and was totally unimpressed. I've had better steaks at Salt Grass. "They" say you get what you paid for. We did not....Service was great but that was about it.

                    I was dissapointed in my last 2 trips there as well. I won’t return.
