    Best Game Meat

    What is your opinion on what the best wild game meat is, Ive always heard that Nilgai was the best but further research im seeing alot of people saying that Oryx is. We do a cooking competition every year, and were trying to win it again but just trying to figure out what meat i need to go after.

            I like a young nilgai calf but sand hill crane is hard to beat. If you’re doing a competition shoot a young one whatever you decide.

                        In North America, dove breast, battered and fried baby pig quarters, yearling elk, squirrel, moose, beavertail, catfish, bull frogs, crappie.

                            Moose or bison.

                            Pronghorn is great but you need to take care of the meat and for heavens sake don't run them across the plains before you take him. Lactic acid buildup sure doesn't help the taste.
                            A little aging also helps if you don't like what some think is a sage-y taste. They mainly eat forbs.

                              I’ve killed one in SW texas and several in WY, and they all tasted the same. Great ! I treat them the same as whitetail or axis and the pronghorn ties with axis as far as I’m concerned. I rate elk a little higher but not much.
