My brother and I are going on a Javelina and Turkey in April but neither of us have ever cleaned a turkey or Javelina. My question is do you clean a javelina the same was as a hog and how in the world do you clean a turkey?
Skin out the turkey, filet the meat off the breast to use for anything I would use chicken breast for and put the legs and thighs in the crock pot til the meat is falling off the bones and mix with my favorite BBQ sauce. Good stuff!
I do mine this way because I can get pretty much all of the meat and not open the body cavity. If you open up the body cavity of a turkey it stinks bad!
Yes I am going to eat the Javelina. Probably have it made into tamales. If I kill it I am going to eat it with a few exceptions. Ok about the turkey but really don't even know where to cut it to breast it. I am absoultely clueless on anything to do with a bird other than dove.
You clean a javelina just like a deer except there is stink gland on the back that you want to avoid. The gland is on the surface of the skin top of the back near the rear. It comes off when you skin the animal so it is pretty easy to avoid.
Just remove everything that you don't want to eat.
No, seriously the javi, not to sure about. Shouldn't be much different that a pig but because of the muskyness there might be some glands to watch out for.
For the turkey it all depends on what you want to do with it. Like the others said, if all you want is the breast meat then skin the breast back exposing the meat and filet the
meat off of the bone. btw, keep the bird intact untill you reach home, you know, game laws and all.
Now if you want the bird whole then cut around the vent hole then up to the bottom of the breast, opening up the cavity. Reach in all the way to the throat, scraping down the sides as you go, then pull it all out. Keep the liver and gizzard if you want to. When you get him home you can hose out the cavity real good with a hose. For the outside of the bird you can either skin or pluck him. I pluck them. I hang him up on a fence upside down and start at the legs working down to the head. When that side is done, flip him over and do the other. I use a propane plummers torch to singe off the fine feathers and quills. Cut off the head, neck ( save neck) and feet. Hose him down inside and out real good then get ready to eat. I'll deep fry or roast a whole bird. I prefer to slow roast mine just like a store bought. Mighty fine eating with a cornbread and wild rice stuffing.
flip the bird on it's back and pull a strip of feathers off the breast. then cut the skin down the breast bone exposing the meat. then just fillet the meat off each side of the breast bone. some eat the legs most say it is tough.
turkeys-just breast out the turkey and remove legs, javi's- just stay away from the nasty scent gland on top of there back on the spine area above the tail and to not put your hands on it either and it's just like any thing else from there

Javis are real easy to clean. Take a few pictures and then leave the tailgate open and leave it on the tailgate. Tried eating one once and it wasnt the best on the grill and we were hungry. I guess if you grind it and spice it enough to hide the taste it would be eatable.
